You can’t once the newest iOS is installed you can’t. And yeah I know about the pull down thing it pisses me off so much I HATE iOS 5. But to reset all to like groundbreaking new to how it came it when you got it. Any hook it up to your pad and click renovate or go into settings and click I reckon a touch like “erase all data” or “reset to factory settings” do both to get the iPad/iPhone/iPod fully inane. But you will still not go back a iOS translation even if you click renovate or factory settings

Books take up a few megabytes, if they were 16MB each (huge) you could store a thousand on a 16GB unit. (over simplified)
If you are concentrating on books then get the 16GB model.

I don’t know of any wired iPads, but as far as I know, both iPads join to the internet in one of 2 ways. You can get the data plot (which I take upon physically you didn’t get) or you can join it to your home’s wireless router. If your pad is collectively to the internet owing to a wire, not wirelessly, then you might need to buy a wireless router so that your iPad can join to that.
